A recipe for a ridiculously delicious apple cake I love to whip up on those days when all you really need is a slice of something sweet… which, if I’m being honest, happens far more often than I care to admit. Have a go and bake yourself and let me know what you think.
This is just a test post/recipe though it is delicious..
Ingredients
2 Large Cooking Apples
140g Plain Flour
190g Caster Sugar
2 Large Eggs
2.5ml Vanilla Extract
90g Unsalted Butter
80ml Milk
140g Plain Flour
½ tsp Ground Cinnamon
21/2 tsp Baking Powder
Preparation
Preheat your oven to 200C (slightly lower for fan assisted ovens)
Slice the Apple into 3mm segments, cover and set to one side
Prepare a Baking tin by lining with Parchment
Mixing the Ingredients
Use an electric whisk to whisk the eggs, 180g caster sugar and vanilla extract together until the mixture is thick and like a batter
Next melt the butter gently in a saucepan with the milk making sure it does not boil and only the butter melts
Once the butter has melted pour the mixture onto the Eggs while whisking. If the mixture is too hot it will cook the eggs so be careful when melting the butter
Sift the Flour, Cinnamon and Baking Powder and then add the other ingredients together
Fold the ingredients carefully but thoroughly so that there are no lumps of flour
Pour the complete mixture into the prepared tin and smooth the surface
Arrange the apple slices over the batter
Sprinkle the remaining Sugar over the top of the mixtures
Cooking
Put the mixture into the centre of your oven and bake for 15 minutes
Reduce your oven temperature to 180c and bake for a further 25 minutes or until well risen and golden brown
Remove your cake from your oven and set to cool inside the tin so it can easily be removed
Serve and enjoy once cooled
